Yummy Yogurt Bread

This one bowl yogurt bread is quick to prepare and makes a delicious snack or after dinner treat! The base of yogurt keeps the bread moist and is a good source of calcium, which works to build strong bones and teeth! We recommend topping this loaf with a dollop of sweetened yogurt and strawberries. Other great options include fruit jam, your favourite nut or seed spread, a lemon glaze, or even plain.

 Ingredients for Yogurt Bread:

  • 1 cup Dahi or plain 2% or 3% yogurt

  • 2 cups whole wheat flour

  • 1/2 cup white sugar

  • 1/3 cup vegetable oil

  • 3 tbsp water

  • 2 eggs

  • 2 tsp baking powder

  • Zest of a whole lemon

  • Juice of half a lemon

  • Pinch of salt

Ingredients for Topping:

  • 1/2 cup Dahi sweetened to taste suggestions: honey, sugar, maple syrup, or date syrup

  • 1 cup strawberries sliced

Equipment:

  • Cutting board

  • Knife

  • Large mixing bowl

  • Measuring cups

  • Measuring spoons

  • Mixing spoon

  • Loaf pan

Directions:

  1. Preheat the oven to 350F. Coat your loaf pan with oil to prevent the batter from sticking.

  2. In the large bowl crack the eggs and add in the sugar. Mix until combined.

  3. Add in the oil and the zest of a washed lemon. Once zested slice the lemon in half and juice one half. Stir in the juice.

  4. Pour in the yogurt and combine all the wet ingredients.

  5. Into the bowl add the whole wheat flour, baking powder and salt. Mix it all together until just combined, be careful not to over mix.

  6. Bake for 35-40 minutes or until the edges are golden and a toothpick stuck in the middle comes out clean.

  7. Allow to cool then slide yogurt bread and top slices with sweetened yogurt and strawberries

Storage Tip: Keep loaf at room temperature in a sealed container for 3-4 days. OR wrap the loaf whole or in slices in plastic wrap, and place it in a container in the freezer for up to a month.

 

Cooking Tip: If you don’t have a loaf pan, swap it for a 8 inch round pan and reduce cook time by 5-10 mins. When a tooth pick comes out almost dry, its done!
