Watermelon Shaved Ice
Searching for a frozen treat to cool you off in the summer? Look no further than this fruity watermelon shaved ice. This recipe is a great way to use up those giant juicy watermelons that come in season in July and August. You and your family will have a blast crushing watermelons and juicing citrus to make these sweet and slightly tart frozen snacks. With a bit of patience you can enjoy these on the next sunny day!
Directions:
With adult supervision, roughly chop the contents of half a watermelon. Save any juices left in the rind.
If you have a blender, place watermelon in the blender and pulse until it is mostly juice, with pieces of watermelon pulp
If you do not have a blender, place watermelon pieces into a large ziplock bag and remove as much air as possible. Using your favourite tool of choice you are going to carefully mash the watermelon until it becomes mostly juice. You may have to repeat this process a couple of times depending on how much watermelon you have. Using a rolling pin or a heavy pot are both good options for the juicing process.
Once your watermelon has been juiced, pour it into a large flat container or baking dish.
Add in the juice of 1 lime, sugar, and mint, mix.
Place mixture in the freezer for 2-3 hours. Then using a fork gently scrape off of the top layer of ice, it should start to become the texture of a snow cone. Return the mixture to the freezer and repeat the process until the entire pan has been shaved.
Serve shaved ice mixture in a bowl as a refreshing treat on a hot summer day!
