Very Berry Yogurt Parfait
This yogurt parfait is a great balanced breakfast to start your day or a nutritious snack to energize you midday! With crunchy granola, juicy fruit, and tart protein rich greek yogurt your whole family will enjoy making and eating this recipe! We challenge you to experiment with different seeds, fruits, and nuts when making the parfaits and try using in season fruit when posssible.
Yield: 5 parfaits
Ingredients:
2 & 1/2 cups greek yogurt 0-2%
1 cup berries ex. strawberries, blueberries, raspberries, or blackberries.
*Substitute berries for your favourite in season low glycemic index fruit.
1 & 1/4 cup homemade granola
Granola Recipe:
1/4 cup oil
2.5 tbsp honey, maple syrup or brown sugar
2 egg whites
1/4 tsp ground cinnamon
1/4 tsp salt
1 & 1/2 cups quick oats
1/4 cup sunflower seeds
Optional add-ins: shredded coconut, nuts, high fibre unsweetened dried fruit

Directions:
Make Homemade Granola
Pre-heat oven to 325F. Line a baking sheet with parchment paper. If you don’t have parchment paper, lightly grease with oil by using a paper towel to spread over the baking sheet. Set aside.
Crack two eggs, one at a time into the small bowls, carefully with help separate the egg white from the yolk. Add the egg whites into the large bowl and either save the yolks for a future recipe or discard them.
Into the large bowl add the oil, honey, cinnamon and salt. Use the whisk or fork to combine.
Add oats and sunflower seeds, and stir to coat. If using shredded coconut, add it in at this step and stir to coat.
Spread the oat mixture onto an even layer prepared baking sheet. If the mixture is clumpy, use a spatula or spoon to press it into the pan.
Bake for 15-20 mins. Have an adult stir the oats half way through. The granola is ready when golden-brown and sunflower seeds have toasted.
Remove from oven and stir in dried fruit if using. Allow to cool completely, about 30 mins to 1 hour.
Store in an airtight container and store at room temperature.
Assemble Yogurt Parfaits
Dice or slices strawberries. Leave blueberries, raspberries, and blackberries whole. If you are substituting berries with another fruit make sure to cut them into small bite sized pieces.
In your parfait cup or bowl layer yogurt, fruit and granola, repeat the with a second layer of each, you should have 6 layers total.
