Veggie Fried Rice

Yield: 6 Servings

  Ingredients:

  • 2 tbsp + 1 tsp vegetable oil* divided

  • 3 cups brown rice, day old preferred.

  • 1 bell pepper, diced

  • 1 cup frozen peas and carrots mix

  • 6 eggs

  • 2 stalk of green onion, sliced

  • 1/4 cup soy sauce

  • 3 cubes of ginger-garlic puree

  • 2 tsp honey or sugar*

  • 2 tsp of sesame oil* (optional)

  • 1/2 tsp sriracha or chili flakes* (optional)

  • Customize with any additional veggies or proteins ex shelled edamame, broccoli, tofu

    *Not included in meal kit

Equipment:

  • Measuring cups/spoons

  • Cutting board and Knife

  • Wooden spoon/spatula

  • Large frying pan

  • Large bowl

  • Small bowl

Directions:

  1. Place a large pan on medium-high heat and pour in 1 tbsp of oil. Add in diced pepper and frozen vegetable mix. Cook for 2-4 minutes until vegetables are cooked through.

  2. Remove vegetables from the pan and place them in a large bowl, set aside.

  3. Add 1 tsp of oil to the pan. Crack 6 eggs into the hot pan and mix quickly scrambling the eggs. Once just cooked take them off the pan and add them into the bowl with the vegetables.

  4. Add remaining 1 tbsp of oil in the pan. Pour in the chilled 3 cups of rice and stir cooking rice until it is lightly brown and toasted. If your pan is not big enough to cook 3 cups all together, cook the rice in two, 1 1/2 cup batches.

  5. While rice is cooking make the sauce. In a small bowl mix the soy sauce, ginger-garlic, honey, sesame oil, and chili flakes if using.

  6. Once rice is down add in the veggies, egg, and green onion. mix until combined. Drizzle sauce over the fried rice and continue to mix until the rice is coated.

  7. Serve in a bowl on its own or as a side dish.
