Ultra Orange Muffins

These orange muffins have ultra orange flavour and are quick to whip up! They’re easy to take on the go for a quick burst of energy when you need it! This is Cassie’s favourite recipe and is always a hit with everyone you share them with.

Makes 10-12 muffins

 Ingredients:

  • 1 1/2 cups whole wheat flour

  • 3/4 cup sugar

  • 2 tsp baking powder

  • 1/2 tsp salt

  • 1/3 cup vegetable oil

  • 1 cup orange juice (about 2-3 oranges)

  • 1 tbsp grated orange zest (about 2 oranges)

  • Optional: 1 tsp vanilla extract

Equipment:

  • Large mixing bowl

  • Medium bowl

  • Grater

  • Whisk or fork

  • Measuring cups and spoons

  • Knife

  • Cutting board

  • Muffin pan

  • Muffin liners

  • Oven

  • Oven mitts

 

Directions:

  1. Preheat oven to 350F and line your muffin pan with liners.

  2. In a large mixing bowl, combine flour, sugar, baking power and salt. Combine together using a whisk or a fork.

  3. Zest oranges using a grater and juice oranges. Zest the oranges before squeezing the juice.

  4. Add zest to the dry mixture.

  5. Combine oil, orange juice, and vanilla if using.

  6. Add wet ingredients into the dry. Whisk to combine.

  7. Fill muffins 3/4 of the way.

  8. Bake for 20 minutes, or until a toothpick inserted comes out clean.

  9. Allow to cool for at least 15 minutes before eating. If you don’t wait for them to cool, the middle of the muffin will be too wet and might seem underdone. The muffins continue to cook as they cool.
