Pepper Eggs-In -A -Hole
This delicious veggie centred variation on eggs in a hole starts your day off with a quick, easy and nutritious breakfast. These eggs can be made with your favourite colour of bell pepper and can be customized with different combinations of spices and sauces! Whether you like your eggs runny, hard, or as a cheesy omelette this dish is for you!
Yield: 10 egg rings
Ingredients:
2 large, or 3 small red, orange, or yellow bell peppers
10 large eggs
2/3 cup shredded cheese
1 tbsp oil
Pinch of salt and pepper
Herbs and seasoning of your choosing suggestions include: oregano, parsley, basil, garlic powder and/or onion powder
Optional combos: include adding a spoonful of salsa or pesto for Mexican or Italian inspired eggs
Equipment:
Large frying Pan with a lid
Knife & Cutting board
Large plate
Large mixing bowl
Measuring cups and spoons
Fork or Whisk
Small clear glass
Directions:
Wash and dry your peppers
Place the peppers on their side, securely hold them by the top of the pepper. Carefully, with your adult helper cut a thin slice off the end of the pepper (the non-stemmed end). Save the slice to eat later.
Slice the peppers into 1/4 inch rounds, removing any seeds from the inside. Set rounds aside.
Preheat a large frying pan with oil on medium
Crack eggs one at a time into a clear glass to check for any egg shells, then place them into a large mixing bowl
Measure out your cheese and gather all spices and seasoning add ins
Method 1: For Runny sunny side up eggs
Evenly space out 5 pepper rings in the pan. Using a quarter cup measuring cup transfer 1 egg into each pepper ring. Season with salt, pepper and desired other spices. Top each ones with 1 tbsp of cheese. Cover the pan with a lid and cook for 4-5 minutes. Repeat with remaining 5 pepper slices and eggs
Method 2: For omelet style eggs
Using a whisk or fork beat the cracked eggs in the large bowl. Season with salt, pepper and desired other spices.
Evenly space out 5 pepper rings in the pan.
Using a measuring cup pour approximately 1/4 cup of the egg mixture into each ring and top with 1 tbsp of cheese each. Cover the pan with a lid and cook for 4-5 minutes. Repeat with remaining 5 pepper slices and eggs
