Tofu Kabobs
Yield: 10 skewers
Skewer Ingredients:
10 wooden skewers, soaked
1 300g block of firm tofu, pressed
3 Peaches, cubed
3/4 of of red onion
2 zucchini's, cut into half moons
Sauce Ingredients:
2 limes, juiced
2 tbsp brown sugar
3 Garlic cloves, grated or finely chopped
1 1/2 tsp cumin-coriander blend
3 tbsp soy sauce
2 tsp ginger powder
Equipment:
2 Baking trays
Small bowl
Spoon/Whist
Measuring cups/spoons
Cutting board & knife
Paper towel
Plate
Heavy items (i.e. cans)
Large bowl
Directions:
Fill a baking tray with cold water, place wooden skewers onto tray and let them soak in the water for at least 10 minutes before cooking.
*Optional* On a plate, put down a layer of paper towel. Place the tofu on top and cover with another layer of two of paper towel to press out the water. Place heavy items such as a can on top of the water towel to help remove the moisture from the tofu. Let it sit for 30 minutes.
In a small bowl mix together the sauce ingredients, lime juice, brown sugar, cumin-coriander, soy sauce, ginger powder, and garlic
Cut pressed tofu into medium sized cubes. Place tofu in a large bowl and and pour in the sauce.
While the skewers are soaking and the tofu is marinating prepare the ingredients for the kabobs. Chop up the peaches, onion, and zucchinis, set aside
To assemble kabobs layer pieces of tofu, peaches, zucchini, and onion in a repeating pattern onto the skewers. *Be careful skewers are sharp*
Repeat this process until all the ingredients are finished.
Turn the oven on to broil. Place kabobs onto a baking tray and into the oven to cook for 8 minutes. After four minutes have your adult helper take the kabobs out of the oven. Flip the kabobs and brush or drizzle them with the remaining marinade. Cook for another 4 minutes.
