Sweet and Fruity Bannock
Ingredients:
1 cup all purpose flour
2 ½ tsp baking powder
¼ tsp salt
2 tbsp brown sugar
2 tbsp oil or melted butter
½ cup water
1 cup fruit of choice
Equipment:
Medium bowl
Whisk or fork
Measuring cups
Measuring spoons
Medium or large frying pan
Tea towel or plastic wrap
Knife
Cutting board
Directions:
In a medium bowl, mix together the flour, baking powder, brown sugar, and salt together using a whisk or fork.
Add the water and 1 tbsp of oil or melted butter to the flour mixture, and using clean hands or a spatula stir together until it forms a dough. If the mixture is too sticky, sprinkle in more flour 1 tbsp at a time until you can make a ball with the dough.
Let the dough rest for 10-15 minutes in the bowl at room temperature, covering the bowl with a tea towel or plastic wrap.
After the dough has rested, with the help of an adult cut the dough into 5 or 6 equal-sized pieces. Use your clean hands to make each piece of dough round like a ball and then use your hands to flatten it to about
With the help of an adult, heat a frying pan on the stovetop at medium heat.
Add the remaining 1 tbsp of oil or melted butter to the pan, and gently drop 2-3 pieces of dough in the pan at a time. Cook for 3-4 minutes per side, or until golden brown.
Serve topped with fruit of choice while still warm, and freeze any leftovers once they’ve cooled down.
