Tropical Yogurt Bark
Eating this tropical yogurt bark will transport your tastebuds to a far away island! This refreshing frozen treat pairs creamy yogurt with juicy pineapple and sweet nutty coconut giving you a flavour combination that can’t be beat! Yogurt bark is a great recipe to experiment with when you have odds and ends of fruits, cereals, and granolas that need to be used up. Have fun swirling in the last spoonful of jam or peanut butter for an extra special treat!
Yield: 4-5 Servings
Ingredients:
2 cups 6% fat Balkan yogurt (you can use any high fat yogurt or greek yogurt),
1 cup pineapple pieces cut into small bit sized tidbits
1/4 shredded sweetened coconut
Sweetener of choice to flavour yogurt (ex. 3 tbsp honey, maple syrup, or sugar)*
1 tsp vanilla (optional)*

Equipment:
Cutting board & Knife
Mixing spoon
Measuring cups and spoons
Baking Sheet
Large bowl
Parchment paper
Directions:
Line a baking sheet with parchment paper, set aside.
Into a large bowl measure out 2 cups of yogurt and sweeten with sugar of your choosing: ie. honey, maple syrup, white sugar. If using stir in vanilla. Feel free to add any other spreads or flavours here ex. jam, nut butter, or seed spread.
Pour flavoured yogurt onto the baking tray and spread into an even layer.

Sprinkle pineapple tidbits and coconut over top of the yogurt bark making sure the toppings are evenly distributed.
Place into the freezer for about 3 hours. This step requires a bit of patience.
Once frozen break into large pieces. Feel free to use your hands or a knife and cutting board for this step. Then enjoy your frozen snack!
