Plantain Puff Puffs
Ingredients:
2 overripe plantains
3 cups flour
2 1/4 tsp active dry yeast
1 1/2 cup warm water
1/2 tsp salt
Equipment:
Measuring cups and spoons
2 Bowls
Mixing spoon
Fork
Kitchen towel
Muffin tin (12 muffins)
Oven mitts
Directions:
Preheat oven to 400 F
In a large bowl, combine 1/2 cup warm water and the yeast. Set aside for 10 - 15 mins.
Peel the plantains. Mash the plantains in a bowl with a fork. Add the remaining 1 cup warm water and stir together.
Add the mashed plantains to the yeast mixture. Add the salt and stir together.
Gradually add in the flour. Stirring the batter every time you add a portion of the flour. Stir to form the batter.
Cover the batter with a clean kitchen towel and let it rest for 40 minutes.
Grease a muffin pan.
Portion the batter into the muffin pan. Bake for 17-20 minutes.
