Homemade Pizza Pops
Yield: 8 Servings
Ingredients for the dough:
3 cups whole wheat flour, divided, Plus a little extra for rolling out
1/4 cup sugar
2 1/4 tsp or a 0.25 oz-package of active dry yeast
1 cup warm water
3 tbsp oil
1 egg beaten or 1 tbsp oil to brush on top
2 tsp. kosher salt

Ingredients for the Filling:
1 cup tomato sauce
1 1/2 cup shredded cheese
1 green pepper diced
5 mushrooms diced
Any additional toppings you like
Directions:
Preheat the oven to 375F.
In a large ziplock bag add 1 cup flour, sugar, yeast and warm water.
Seal the bag and squish the mixture together with your hands to mix. Let it rest 10 minutes at room temperature.
Then add 1 cup flour, oil, and salt to the bag, then seal and squish together. Pour in the remaining cup of flour and mix until combined.
On a clean work surface sprinkle a layer of flour and dump out your dough from the bag. The final step is kneading the dough until it’s smooth. To knead the dough you use the heel of your hand to push the dough away from you, then lift the far end the dough and fold it backwards. Rotate the dough a quarter of a circle and repeat this process for 5 minutes. Cover the dough with a kitchen towel and let it rise 30 minutes.
Cut the dough ball into 2 portions. Set one aside covering with towel so it doesn’t get dry.
Place 1 dough ball on a grease baking sheet. Put bit of oil on your fingers and use them to stretch out the dough into a large rectangle. Divide the rectangle into 4 squares, each square will be a pocket.
Generously spread tomato sauce over half of each of the squares leaving a small boarder uncovered. Top with cheese and veggies until each one is nicely full. Fold over the plain half of dough over the toppings and seal around the edges with a fork.
Bush a light coating of oil or 1 egg beaten over top to make it golden brown. Repeat this process with the second ball of dough. Place them into the oven to bake for about 20-25 minutes until the top and bottom are golden brown.
