Pineapple Salsa with Homemade Tortilla Chips

Yield: 6 Serving

Ingredients for Pineapple Salsa:

  • 1 can pineapple tidbits or chunks, drained

  • 1/4 red onion, diced

  • 1 lime

  • 1/4 bunch cilantro

  • 1 tsp salt

Equipment needed for Pineapple Salsa:

  • Cutting board

  • Knife

  • Large mixing bowl

  • Mixing spoon

  • Measuring cups and spoons

 

Directions:

  1. With adult supervision, finely chop onion and cilantro. If you want smaller chunks of pineapple, cut these to your desired size.

  2. In a large mixing bowl, combine pineapple, chopped onion, and cilantro. Add salt and the juice of 1 lime.

  3. Taste the salsa and add additional seasonings to your preference.

Homemade Tortilla Chips:

  • 4-5 whole wheat tortillas

  • 1 tsp salt*

  • 2 tsp Oil or cooking spray*

Equipment for
Homemade Tortilla Chips:

  • Large baking sheet

  • Oven mitts

  • Oven

  • Knife

  • Cutting board

  • Large bowl

Directions:

  1. Preheat oven to 400F. Spray a large baking sheet with cooking spray or grease lightly with oil and a paper towel.

  2. Cut each tortilla into 8 equal sized wedges.

  3. Place tortilla wedges into a large bowl and add 1-2 tsp of oil, and 1 tsp of salt. Use your hands to gently distribute the oil and salt.

  4. Place tortilla wedges onto your baking sheet in a single layer. Make sure they don’t overlap so you get crispy chips!

  5. Bake in your preheated oven for 10-12 mins or until chips are crispy and starting to turn brown in spots.

  6. Allow to cool for 5 mins before serving with your pineapple salsa.

Fun Fact: Pineapples contain an enzyme called bromelain which can break down proteins. That enzyme is why your mouth can feel funny when eating lots of pineapple!
