Peaches and Cream Yogurt Parfait

Ingredients for parfaits:
2 & 1/2 cups yogurt
1 can peaches, drained
1 & 1/4 cup homemade granola
Ingredients for homemade granola:
1/4 cup oil*
1/4 cup honey*, white sugar* or brown sugar*
1/4 tsp ground cinnamon
1/4 tsp salt*
1 & 1/2 cups quick oats
1/4 cup sunflower seeds
Optional add-ins: shredded coconut*, dried fruit*, or chocolate chips*

Directions:
Make Homemade Granola
Pre-heat oven to 325F. Line a baking sheet with parchment paper. If you don’t have parchment paper, lightly grease with oil by using a paper towel to spread over the baking sheet. Set aside.
Using a whisk or a fork, combine together the oil, honey, cinnamon and salt.
Add oats and sunflower seeds, and stir to coat. If using shredded coconut, add it in at this step and stir to coat.
Spread the oat mixture onto an even layer prepared baking sheet. If the mixture is clumpy, use a spatula or spoon to press it into the pan.
Bake for 20 mins. Have an adult stir the oats half way through. The granola is ready when golden-brown and sunflower seeds have toasted.
Remove from oven and stir in dried fruit if using. Allow to cool completely, about 1 hour. Add in chocolate chips once the granola has completely cooled.
Store in an airtight container and store at room temperature.
Assemble Yogurt Parfaits
Dice peaches, or leave them as slices.
Place 1/2 cup of yogurt into a serving bowl.
Top with 1/4 cup of homemade granola and peaches.

Tip: Experiment with this recipe by using different toppings in your granola and fruits in your yogurt! Try substituting the honey with maple syrup, or adding in dried fruits like raisins or dried apricots. Be aware that add ons such as nuts or fruits can impact the carbohydrate content.
