Greek Inspired Pizza in a Bag

Ingredients for the dough:
3 cups whole wheat flour, divided. Plus a little extra for rolling out
1/4 cup white sugar*
2 1/4 tsp active dry yeast
1 cup warm water*
3 tbsp oil*
1 tsp. kosher salt*

Ingredients for the Toppings:
1 cup tomato sauce
1 1/2 cup shredded cheese
1 green pepper diced
2 tomatoes sliced in half moons
1/2 cup kalamata olives
Any additional toppings you like*
Equipment:
1 baking trays
A large plastic bag
Measuring cups
Measuring spoons
Cutting board
Knife
Clean dish towel
Directions:
Preheat the oven to 375F.
In a large Ziplock bag add 1 cup flour, sugar, yeast, and warm water.
Seal the bag and squish the mixture together with your hands to mix. Let it rest 10 minutes at room temperature.
Then add 1 cup flour, oil, and salt to the bag, then seal and squish together. Pour in the remaining cup of flour and mix until combined.
On a clean work surface sprinkle a layer of flour and dump out your dough from the bag. The final step is kneading the dough until it's smooth. To knead the dough you use the heel of your hand to push the dough away from you, then lift the far end of the dough and fold it backward. Rotate the dough a quarter of a circle and repeat this process for 5 minutes. Cover the dough with a kitchen towel and let it rise for 30 minutes.
Place the dough ball on a greased baking sheet. Put a bit of oil on your fingers and use them to stretch out the dough into a large rectangle.
Generously spread tomato sauce over the dough leaving a small border uncovered. Top with shredded mozzarella and toppings
Place it into the oven to bake for about 30-35 minutes until the cheese is bubbling and the crust is golden brown.
