Sweet or Savoury Cottage Cheese Buns
These Cottage Cheese Buns can be made as sweet or savoury! You decide how you want it. We have two options for you in this recipe. These buns have cottage cheese which is a source of calcium and phosphorus, both important in building healthy bones. It’s also high in protein, which helps to build strong muscles! You can have this as a snack, as a dinner roll, or cut them in half for mini sandwiches!
Makes 12 mini buns
Ingredients:
For sweet buns
3/4 cup cottage cheese
2 eggs
1 tsp vanilla extract
1/3 cup sugar
2 tsp baking powder
2 cup whole wheat flour
1 egg (to brush the tops)
2 tbsp sugar (to sprinkle to tops)
For savoury buns
3/4 cup cottage cheese
2 eggs
1 tsp salt
1/4 cup white sugar
1/2 tsp dried oregano
1/2 tsp dried basil
1 tsp garlic powder
2 tsp baking powder
2 cup whole wheat flour
Optional: 1 egg (to brush the tops)
Equipment:
Knife
Cutting board
Large mixing bowl
Whisk or fork
Skillet or sauté pan
Spatula
Baking sheet
Parchment paper
Oven
Oven mitts
Directions:
Preheat oven to 350 °F.
Combine together cottage cheese, and eggs in large bowl. If making sweet buns, add in vanilla and 1/3 cup sugar. If making savoury buns, add in 1/4 cup sugar, salt and herbs. Mix to combine.
Add flour and baking powder into the mixture.
Flour your clean table or cutting board well, as the dough will turn out sticky. Using a knife or your hands to tear, divide the dough into 12 equal pieces.
Form round shapes out of each piece, placing them apart on a baking sheet. Brush the tops with egg. If making sweet buns, sprinkle with sugar.
Bake buns at 350 °F for 20 minutes until they become golden brown. Let them cool to room temperature before serving. Keep the remaining portion fresh, by sealing them in an airtight container.
Fun Fact! Cottage cheese got its name because it was made in cottages from milk leftovers after creating butter.
