Creamy Coleslaw

This creamy coleslaw uses yogurt in place of mayonnaise giving this side a light and tangy flavour along with added protein to keep you going for all your activities! This recipe pairs perfectly with lentil sloppy joes or is a great side dish for all your summer BBQs and picnics.

Yield: 6-8 Servings

 Ingredients:

  • 1 (397g) bag of coleslaw

  • 1 carrot, grated

  • 2 green onions, thinly sliced

  • 1/2 cup parsley chopped

  • Juice of 1 lemon

  • 2/3 cup 3.2% dahi yogurt

  • 1 tsp celery seed

  • 2 tsp mustard powder

  • 1/2 tsp salt ( to taste)*

  • 2 tsp white sugar*

  • *ingredients not provided in meal kit

Equipment:

  • Cutting board & Knife

  • 1 large bowl

  • 1 small bowl

  • Spoon

  • Whisk

  • Measuring cups/ Spoons

  • Tongs/Serving spoons

Directions:

  1. In a large bowl add in the coleslaw, grated carrot, green onion and parsley, toss to combine.

  2. In a small bowl add in the dahi yogurt, juice of a lemon, celery seed, mustard powder, salt, and sugar, mix. Taste the dressing to see if the flavour is to your liking. If not, adjust salt and seasoning to your family’s preference.

  3. Pour dressing over coleslaw mixture and mix until all the cabbage is coated.
