Chick’n Nuggets & Fries
Crispy coated chicken fingers with golden salty fries and ketchup are a universally loved lunch or dinner. Today we are going to reinvent this classic combo using the plant-based protein tofu and serve it with crunchy baked homemade fries. This protein and starch duo will make a perfect balanced pairing with this week’s summer melon salad!
Yield: 6-8 Servings
Ingredients for Tofu:
2 blocks extra firm tofu
1 1/2 tbsp of BBQ seasoning
1 cup whole wheat flour
1 cup milk of your choice*
1 1/2 cups breadcrumbs
1 tbsp + 1 tsp oil*
Ingredients for Fries:
5 medium yellow potatoes
1 1/2 tbsp + 1 tbsp oil*
2 tsp BBQ seasoning
*ingredients not provided in meal kit
Equipment:
Cutting board & Knife
3 medium sized bowls
Spoon
Large mixing bowl
Measuring cups/ Spoons
2 Baking trays
Directions:
Preheat the oven to 400F.
With adult supervision, slice each block of tofu into 3 parts, length wise. Then cut each slab of tofu into 3 long strips. With your hands break each strip into 4 larger bite sized pieces.
Place tofu into a large bowl and drizzle with 1 tbsp of oil. Mix until tofu is coated and then sprinkle it with 1 1/2 tsps of BBQ seasoning.
Grease a baking tray with oil set aside.
Prepare three bowls: In one bowl place flour and 1 1/2 tsp of BBQ seasoning, in the second bowl milk, and in the third add breadcrumbs and final 1 1/2 tsp of spices
Arrange the tofu, bowls, and baking tray into a breading station. Using one hand for dry and one for wet ingredients dip a piece of tofu into flour, then milk, and finally breadcrumbs. Place on the tray. Continue until all tofu has been breaded.
Wash and dry yellow potatoes well as we will be keeping the skin on.
Slice potatoes into matchsticks, try to keep them all the same size. Place fries in a large bowl and drizzle 1 1/2 tbsp of oil over them, mix until all potatoes are coated. Sprinkle with BBQ seasoning
Place fries on baking tray that has been heavily oiled, with about 1 tbsp oil to prevent sticking.
Bake fries and nuggets for 30 minutes flipping half way, or until golden and crispy.
