Cauliflower Crust Pizza
Today we are turning everyone’s favourite cheesy dish, pizza, into a high protein, low carb meal! Made with riced cauliflower, and a special ingredient cottage cheese this crust makes a delicious based to pile with tons of tasty veggie toppings!
Yield: 5 servings
Ingredients:
12 oz bag frozen riced cauliflower
1 cup 1-2% cottage cheese, or pressed cottage cheese
1 tsp oregano
1/2 tsp salt
1/2 tsp galic powder
1/2 tsp onion powder
pinch of black pepper
1/2-3/4 cup tomato sauce
1 1/2 cup shredded cheese
Veggie toppings of choice including mushrooms, olives, zucchini, eggplant, spinach, sundried tomato
Equipment:
Measuring cups and spoons
2 large bowls
1 clean dish/tea towel
1 baking tray
Parchment paper
Spatula/spoon
Food processor (optional)

Directions:
Pre-heat oven to 400 F and grease a baking sheet.
Defrost the cauliflower according to package directions then transfer the cauliflower into a clean dish towel. With help from your grown up helper, over the sink, carefully squeeze the water out of the cauliflower. Make it as dry as possible for best results. Once squeezed place the cauliflower into a large bowl
Measure 1 cup of regular or pressed cottage cheese. For a smoother texture blend it in a food processor for approximately 30 seconds.
Add the cottage cheese into the large bowl. Add in the oregano, garlic power, onion powder, salt and pepper. Stir until combined.
Line your baking pan with parchment paper or grease it well with oil. Transfer the cauliflower mixture onto the tray and spread it into a large round circle about 1/2 inch thick.
Bake for 20-25 minutes on the bottom rack of your oven until the bottom of the crust is golden brown and the top is no longer wet.
While crust bakes slice up your favourite vegetable toppings.
Once crust is ready, assemble your pizza. Spread a layer of tomato sauce, and top it with shredded cheese and sliced veggies.
Bake for 10 minutes until the cheese is melted.
