Carrot Fries

Yield: 5 Servings
Ingredients:
5 large carrots, peeled
1 egg white, separated from a whole egg, save yolk to bush on top of Pizza pops
1 1/2 tbsp olive oil
2 tsp water
1 tsp garlic powder
1 tsp cumin powder
1 tsp paprika (smoked paprika adds a nice flavour)
1/4 tsp black pepper
3/4 tsp salt

Directions:
Preheat your oven to 425F. Line your baking tray with parchment paper or grease it with a thin layer of oil.
Divide each carrot into 2-3 segments, they should be the length of an average french fry. Then cut each portion in half lengthwise. Each half should be cut futher into 3rds or 4thβs depending on the thickness of your carrots.
Carefully separate your egg white from the yolk and save the yolk in a covered container for another recipe. Place the carrots and egg whites in a large bowl together and toss them until the carrots are coated in the egg white.
Into the bowl add the olive oil and water, toss. Sprinkle in the seasoning: garlic powder, onion powder, cumin, paprika, salt and pepper and mix until the seasoning is well distributed. Experiment with different seasoning combinations!
Transfer carrot sticks on to the baking tray, arranging them in a single layer
Bake for 20 minutes, checking on them on the 10 and 15 minute mark. Transfer to a plate and serve them plain or alongside your favourite dip, suggestions include, ranch, ketchup, hummus, yogurt dip
Recipe Tip: Make your fries even more colourful and nutritious by swapping out some of the carrots for other veggies including parsnips, turnips, and/or beets!
