Avocado Cucumber Boats

These avocado cucumber boats make a tasty and refreshing carb “free food” snack! The light, crispy, and fresh cucumbers are an excellent vehicle for your avocado topping. Serve as a side with your favourite main dish or as its own snack. We encourage you to experiment with other veggie “boats” such as celery or peppers and different fillings!

Yield: 12 muffins or a 9x9 baking pan

 Ingredients:

  • 1 large english cucumber

  • 2 ripe avocados

  • 1-2 limes, juiced

  • 1/2 a small red onion

  • 3/4 tsp salt

  • 1/4 tsp black pepper

  • 1/2 tsp of chilli flakes/ your favourite hot sauce (optional)

Equipment:

  • Cutting Board/Knife

  • A spoon or melon baller

  • A fork or potato masher

  • Measuring spoons

  • Large plate

  • Small bowl

Directions:

  1. Slice your english cumber in half lengthwise. Using a spoon or melon baller remove the seeds from the centre to create a hollow centre for filling. Set aside

  2. Slide your red onion in half, put away the remaining half. Peel the onion and finely dice it into very small pieces. Pro tip wearing onion goggles/swim goggles can help reduce tears when cutting onions. Place the diced onion into a small bowl.

  3. Cut your avocado in half, scoop the avocado flesh out of the half which does not have a pit.

  4. With the other half, with grown up helper assistance carefully slice the half with a pit in half lengthwise so you are left with two quarters. Gently twist each quarter away to free it from the pit. Discard the pit. Repeat with the second avocado.

  5. Using a fork or potato masher, smash your avocado until it is mostly smooth leaving small chunks for texture.

  6. Season with salt, pepper, the juice of 1-2 limes, and chilli flakes (optional). Once the avocado filling is seasoned to your liking its ready to fill the cucumber.

  7. Take each half of the cucumber and with your spoon fill in the hollow centre with your avocado dip and smooth it out to create an even top.

  8. Cut each half of the cucumber into approximately 1.5-2 inch long pieces. These will be your individual avocado boats!

  9. Enjoy your refreshing snack and eat any remaining dip with your favourite veggies or whole grain crackers
