Apple Mug Cake
When you are looking for a small sweet snack and don’t have lots of time this Apple Mug Cake is the perfect option. Made in mug in the microwave you can have fluffy apple cake in under 10 minutes! Make a serving for one or enough for the family this recipe can be multiplied for as many servings as needed. No microwave? No problem! This recipe can also be baked in the oven. This recipe is delicious in all seasons but especially in the late summer/early fall during apple season.
Yield: 1 mug cake
Ingredients:
6 tbsp flour
2 tbsp brown sugar
1/2 tsp baking powder
1/8 tsp salt
1/4 cup water
1 1/2 tbsp melted butter
1 tsp pure vanilla extract*
1/2 tsp cinnamon
1/2 apple, diced
*ingredients not provided in meal kit

Microwave-safe mug or bowl
Measuring cups and spoons

Directions:
With adult supervision, cut the core out of the apple. Dice ½ of the apple.
Add flour, brown sugar, cinnamon, baking powder, and salt to a microwave-safe bowl or mug and stir until well combined.
Add melted butter, water and vanilla (if using) to the same bowl or mug. Stir until well combined but do not over stir.
Mix in apples to the cake batter. Do not over stir.
Microwave for 2-3 minutes, timing will differ depending on the wattage of your microwave.
*Note if you will be baking in the oven in an oven-safe dish: Bake at 350 F for 12-14 minutes.
Fun Fact: The baking powder in the recipe helps the cake to rise as it cooks, through a process called leavening! Leavening is when baking soda or powder reacts with slightly acidic liquid and heat to release a gas, carbon dioxide, which helps our cake batter to rise and become fluffy!
Cooking Tip: If you don’t have a microwave, bake the muffin in an oven safe dish, like a muffin tin, for 12-14 minutes
